Pinot Noir

A dark and rich representative of this varietal that boasts enough tannins and acid to age well. This wine exhibits the dark fruit spectrum toward strawberry jam, black currant, floral and a long fruity crisp finish

Grenache

~$63 14.8% abv.

With grapes sourced from the amazing Casad Vineyard we are excited to share this rare single varietal Grenache from the Red Mountain AVA. Strong aromas of warm raspberries and sun ripe strawberries fold into flavors of rich mineral complexity and cotton candy. Built to age this Grenache is balanced enough to enjoy young.

Merlot

~$50 13.7% abv.

This 100% Merlot aged 24 months in second year French oak presents as bright, ripe fruit that is delicate and approachable. A medium mouth feel with soft tannins makes this a perfect wine to pair with your favorite foods or sip on it’s own.

Mourvedre

~$58 14.6% abv.
With grapes sourced from the amazing Casad Vineyard we are excited to share this rare single varietal Mourvedre from the Red Mountain AVA. Subtle sweet aromas of chocolate and black pepper corn with rich fruit flavors combined with herbal tones and wild flowers.

Syrah

~$50 13.4% abv.

When inclement weather ruined a large portion of our estate grapes in 2022, Windhorse Vineyard located in the Columbia Gorge AVA stepped up to save the day. This Syrah is fruit forward, jammy, with dark plum and black cherry notes and buttery smooth.

Reserve Syrah

~$78 15.2% abv.

From our partnership with Casad Vineyard we are proud to introduce this Reserve Syrah that boasts plenty of rich dark fruit, warm blueberry and honeysuckle flavors with a moderate to heavy mouth feel. Aged in new French oak this wine is approachable young and will develop exceptionally well with age.

Regent

~$65 14.3% abv.

Made in the Amarone style by drying the harvested grapes on racks for months before fermenting. This produces a dark, rich, smoothly tannic red wine with aroma and flavor of ripe pear, blackberry, raisin and cooked blueberry.

Golubok

~$60 2020 13.8% abv.

This is an inky, dark, red wine with medium tannins, smokey nose and very wild/ complex flavors of brite cherry, mineral, leather, tobacco and spice. For a common comparison think of an Italian styled Petite Syrah or mature Tempranillo.

Red Blends

Rosé

~$40 12.9% abv.

At Shiloh Estate Cellars we pride ourselves on producing uniquely bold and flavorful reds; this Rosé follows that tradition. It is a blend of our estate Pinot Noir and Syrah from the outstanding Casad Vineyard in Red Mountain. Expect flavors of ripe raspberries, strawberries, and violets with a crisp clean finish.

Daylight Blend

~$50 13.6% abv.
The Daylight series of blends is meant to highlight the uniquely complex and flavorful spectrum of the lighter style reds. This blend combines Regent 55%, Lakemont 25%, Pinot Noir 10%, and Merlot 5%. Wonderful floral aromatics with flavors of crisp ripe fruit and cherry cola.

Levi’s Day Red Blend

~$52 13.6% abv.
By combining two great varietals from two very different regions we created the best of both worlds. This 50/50 blend of Windhorse Vineyard Syrah and Miramonte Estate Merlot is full of dark fruit flavors, rich and smooth. Aged in second year French oak for 12 months adds a subtle mid-pallet hint of vanilla and toasty oak tannin.

Vineyard Blend

~$55 13.8% abv.

This is a true representative blend of our estate vineyard with all grapes represented. Nose of fruit and cardamom with flavors of pie cherries, balanced tannins and rich acid with subtle vanilla oak structure.

Châteauneuf-du-Pape

~$65 14.8% abv.
This blend is a traditional homage to one of the world’s most popular red blends, the famed Châteauneuf-du-Pape. Grenache 60%, Mourvedre 30%, and Syrah 10%. Boldly aromatic with warm spiced fruit, rich in flavor yet velvety smooth.

Midnight Blend

~$63 14.1% abv.

At Shiloh Estate Cellars we love our bold and dark fruited red blends. The Midnight series always combines the three darkest wines from the vintage; dried Regent, Golubok, and Cabernet Sauvignon. The nose is jammy and earthy with a distinct mid pallet taste of dark fruit compote and a lingering oak finish.

Whiskey Barrel Aged Blend

~$74 15.0% abv.
This is a red wine blend with grapes sourced from the amazing Casad Vineyard in Red Mountain. This blend was aged 1 year in a second use American oak whiskey barrel and comprised of Syrah 56%, Mourvedre 29%, and Grenache 15%. It is a smooth and fruit forward red wine first with subtle yet unmistakable aromas and flavors of caramel and vanilla from the whiskey barrel influence.

Uno Mas Port 500ml

~$70 21% abv.

Always a very Limited Production. This is a unique blend of our red grapes, fortified with our proprietary American oak aged brandy and then aged in a second use Hungarian oak barrel for at least one year. Uno Mas, meaning “one more”, is a ruby port with very rich and complex flavors unique to our wines and has just enough sweetness to cut through the higher alcohol and always seems to leave people asking for just one more glass.

Shiloh Estates Dry Hopped Hard Cider

~$9 Pint 6.8% abv.

This extremely popular cider is made from our own mix of Washington apples and finished with whole cone hops. Expect an off-dry cider first that finishes with smooth citrus and floral notes from the hops.

Shiloh Estates Imperial Hard Cider

~$9 Pint 8.6% abv.

Tons of ripe apple flavor! Like Fall in your mouth and way too smooth for an 8.6% abv imperial. A little on the sweet side but not syrupy.
